Executive Chef

Joe Rodriguez is an Executive Chef with over 22 years of experience in the Food & Beverage industry. Originally from Eagle Pass, Texas, Joe was raised in a military family and spent part of his childhood in Germany—an experience that sparked his passion for global cuisine.

Now based in Colorado Springs, Joe draws inspiration from early food memories—flavors and aromas that shaped his love for cooking. As a chef, he is driven by creativity, cultural influence, and a dedication to crafting memorable, meaningful food experiences.

 

A La Carte Chef

Kate Doncilovic has been a chef in Colorado Springs for over seven years. Originally from Michigan, Kate moved to Colorado Springs 11 years ago and entered into a Classical European-style Apprenticeship at The Broadmoor.

After spending a total of five years at The Broadmoor, Kate has been working downtown as a chef in various restaurants, including White Pie, and Dos Santos. Most recently Kate was the Lead Mentor at Opus Creative Kitchens at The Well. While leading this workforce program, Kate taught students advanced food preparation skills, creative expression, and hospitality standards in 8 week cohorts. When she’s not at work, you can find her in her garden and working towards sustainability in her own home.

 

Chef Butcher

Marshall has been in the culinary industry since he was 17, and for the past seven years has called Flying Horse home. What started as a job quickly turned into a lifelong passion for butchery, bold flavors, and creative cooking. He is especially drawn to southern and southwestern influences, and loves experimenting with spice blends and finding new ways to work with different cuts and proteins.

When he is not in the kitchen, he is usually out on the trail, exploring Colorado’s mountains and chasing wildflowers with his wife (who also works for Flying Horse). Marshall takes a lot of pride in what we do in our kitchens, and he is always looking for new ways to bring fresh ideas and great flavor to the plate.

 

Banquet Chef

Meet Chef Mike Sims! Originally from Wyoming, Mike graduated from Keiser University in Culinary Arts. He then moved to Colorado in 2014 and started at the Broadmoor where he worked as a banquet cook and a saucier. Then Mike joined the Cerberus Brewing Company before coming to Flying Horse in 2019.

When Mike is not at work he enjoys spending time with my wife Shannon and dog Krisp’n. They also enjoy going to Broncos games and concerts.
